Ethyl stearate with CAS number 111-61-5, also named ethyl octadecanoate, is a saturated fatty acid ester synthesized from stearic acid and ethanol via esterification reaction. It exists as white crystalline solid with faint waxy aroma at ambient temperature, melting at 34-38℃, soluble in ethanol and various vegetable oils yet insoluble in water.
