Xanthan gum, also known as Han Sheng gum, is a widely used microbial extracellular polysaccharide produced through fermentation engineering using carbohydrates as the main raw material (such as corn starch) by Xanthomnas campestris, a wild rapeseed bacterium. It has unique rheological properties, good water solubility, thermal and acid-base stability, and good compatibility with various salts. As a thickener, suspension agent, emulsifier, stabilizer, it can be widely used in more than 20 industries such as food, petroleum, and medicine. It is currently the largest and most widely used microbial polysaccharide in the world.
 

Application

1. Food: Xanthan gum is added as a stabilizer, emulsifier, suspension agent, thickener and processing aid in many foods. Widely used in salad dressings, bread, dairy products, frozen foods, beverages, condiments, brewing, confectionery, pastries, soups and canned foods.
2. Daily chemical industry: xanthan gum molecules contain a large number of hydrophilic groups, is a good surfactant substance, and has antioxidant, prevent skin aging and other effects, therefore, almost the vast majority of high-end cosmetics xanthan gum as its main functional ingredients. In addition, xanthan gum can also be used as a component of toothpaste to substantially thicken and shape and reduce tooth surface wear.
3 Application in industry and agriculture: In the petroleum industry, due to its strong pseudoplasticity, the well wall is prevented from collapsing. And because of its excellent salt resistance and heat resistance, it is widely used in drilling in special environments such as marine and high salt layer areas, and can be used as oil recovery and flooding agent to reduce dead oil areas and improve oil recovery rate.
